Broccoli nuggets with oat flakes: Ideal as a quick snack or healthy side dish

Whether it’s a healthy snack, vegetarian dinner or creative vegetable side dish, these oatmeal broccoli nuggets are juicy on the inside and crispy on the outside. They’re easy to make and are a creative alternative to traditional nuggets.

Ingredients
For 4 servings:

300g broccoli

1 Green onion

1 garlic clove

100g oatmeal

60g finely grated cheese

2 Eggs

to taste Salt pepper

Preparation

Bring a pan of water to the boil and add enough salt. Boil the broccoli florets for 2-3 minutes, then remove and cool in ice water.

Chop the cooled broccoli florets very finely.

Coarsely chop the oat flakes in a blender. Wash and finely chop the green onions. Press the garlic into the garlic.

Mix the broccoli, chopped oat flakes, green onion, garlic and cheese in a bowl. Add the eggs and knead everything into a smooth mixture.

Add more egg if necessary or a little more water if the mixture is too dry.
