The ultimate egg spread. Instead of mayonnaise, you put melted butter in it and taste the big thing.
Egg spread is inherent in Czech cuisine. Anyone who didn’t happen to get acquainted with it at home was lucky in kindergarten. There are many recipes for egg spreads. You can try to prepare an egg spread with tawniac, avocado or the classic according to Lada Hruška.
Egg spread with melted cheese
- 7 eggs
- 100 g butter
- 5 triangles of processed cheese
- 2 tablespoons mayonnaise
- 2 tablespoons full-fat mustard
- 1 teaspoon Dijon mustard
- 50 g dill
- salt
- white pepper
- spring onions
- chives
Boil hard boiled eggs, let cool, peel and cut into small cubes. In a bowl, beat the butter with the processed cheese. Add mayonnaise, both mustards and finely chopped dill. Season with salt and white pepper. Gently stir the eggs into the spread. Garnish with chives or finely chopped spring onions and serve with fresh bread.
Egg spread with avocado
If you want to try something a little exotic, egg spread as you don’t know it, run out and buy avocados and start the recipe.
- 4 eggs
- 2 smaller ripe avocados
- 1/3 bell pepper
- 1 teaspoon lemon juice
- chives
- salt and pepper
- chilli flakes
Boil the eggs, cool, peel and cut in half. Carefully remove the yolks and place in a blender. Toss in the peeled avocados, lemon juice, salt and pepper. Blend until smooth. Dice the egg whites and peppers. Mix the blended mixture together with the egg whites and peppers and add the chopped chives. We can add salt or pepper to taste. Serve with bread, if you like, sprinkle with chilli flakes.
Lada Hruška’s egg spread
Who, on the other hand, wants a completely ordinary Czech classic, must reach for Ládi Hruška’s recipe.
- 2 hard-boiled eggs
- cup of Cottage cheese
- 1 tablespoon mustard
- ½ onion
- salt and pepper
- watercress and chives
Dump the cheese into a bowl and add the peeled hard-boiled eggs. Add the mustard and finely chopped onion. Season with salt and pepper, and finally garnish with chopped herbs.
